CocoaX Mint Chocolate Cocoa Bars Recipe
Ingredients:
½ cup butter
½ cup sugar
3 tbsp Cocoa-X Mint
½ tsp vanilla
1 egg – room temperature
½ cup flour
1/8 tsp baking powder
1/8 tsp
salt
Cheesecake Layer
2 – 8 oz packages cream cheese softened
½ cup sugar
1/-1/2 tsp vanilla
¾ cup semisweet chocolate chips, melted and cooled
2 large eggs, lightly beaten
Grenache
1-1/2 cups semisweet chocolate chips
½ cup heavy whipping cream
1 tsp vanilla
INSTRUCTIONS: Preheat oven to 350. Line a 13 x 9 pan with foil and grease foil. Melt butter in a large bowl. Stir in sugar, cocoa and vanilla. Add egg and blend well. Add flour, baking powder and salt. Stir just to blend. Spread in prepared pan and bake for 8 minutes. In large bowl beat softened cream cheese, sugar and vanilla until smooth. Add eggs and beat until just combined. Spread over brownie layer. Bake for 30 minutes. Prepare grenache: In a saucepan bring cream to just a boil. Pour in chocolate chips and whisk until smooth. Stir in vanilla. Pour over cheesecake layer. Refrigerate at least 2 hours and cut into bars.
