CocoaX Mini-Mint Brownie Cups with Mint Cream Filling Recipe
Ingredients:
¾ cup butter melted
1/1-2 cups organic sugar
½ cup CocoaX Mint
2 tsp vanilla
3 eggs
½ tsp salt
½ tsp baking powder
1-1/4 cups organic flour
Preheat oven to 350. Lightly spray and flour a mini-muffin pan, this recipe will yield roughly 16 mini-brownie cups. In a large bowl mix together the melted butter, CocoaX Mint and sugar together. Add vanilla and eggs. In a separate bowl combine the flour, salt and baking powder. Mix well. Add the dry ingredients to the wet ingredients and mix until combined. Scoop roughly 1 tablespoon of batter into each prepared cup or until roughly halfway full. Bake for 12-14 minutes or until a toothpick comes out clean, but do not overbake. Let cook for 5 minutes. Take the end of a wooden measuring spoon and create a well in the center of each cup. Let sit while you make the filling.
